Ingredients

  • 220g pack Co-op 2 salmon fillets
  • 3 clementines, 2 sliced 1 juiced
  • 1 lemon, sliced
  • 2 tsp Co-op clear honey
  • 2 tsp rapeseed oil
  • 200g green beans
  • 1 tsp wholegrain mustard
  • 1 garlic clove, finely chopped
  • 5g fresh dill, roughly chopped
  • (Optional) Co-op sweet soy and honey 10 minute marinade

Method

  1. Preheat the oven to 220°C/fan 200°C/gas 7
  2. Put the salmon into a lined roasting tin and arrange alternating slices of clementine and lemon over the fillets
  3. Heat the honey in the microwave for 15 seconds, until very runny, then mix with 1 tsp of the oil and brush over the citrus slices
  4. Roast the salmon for 15 mins, until it flakes away easily when pressed
  5. Meanwhile boil the green beans in a pan of water for 6-8 mins, until tender
  6. Drain and toss with the clementine juice, mustard, garlic and remaining oil
  7. Serve the salmon and green beans sprinkled with the dill

Optional: Replace honey, oil and lemon with 1/2 packet of Co-op sweet soy and honey marinade. Add the marinade directly to the salmon fillet at stage 2, then layer slices of clementine. Skip stage 3.
